How to make Tropical Poke Salmon Tacos
Yields 3 Lettuce Tacos
Taco Ingredients:
- 2 oz. salmon belly, cut into 1/2 inch cubes
- 1/2 avocado, cut into 1/2 inch cubes
- 1/2 tsp white sesame seeds
- 6 slices of cucumber
- 6 bibb lettuce leaves
- 9 cilantro leaves
Poke Sauce Ingredients:
- Juice and zest of 1 lemon
- Juice and zest of 1 lime
- 1 Tbsp soy sauce
Tropical Salsa Ingredients:
- 2 Tbsp pineapple, diced
- 2 Tbsp mango, diced
- 1/4 red bell pepper, small diced
- 1/2 jalapeño, small diced
- 2 scallions, white part only, sliced thinly
- Juice of half a lime
- 1 tsp olive oil
- Sea salt
- Sesame seeds to garnish
- Fresh cilantro leaves to garnish
Directions:
- Mix all ingredients for poke sauce in a small bowl.
- Marinate salmon belly in sauce for 10 minutes while you gather other ingredients.
- Mix all ingredients for the salsa together in a small bowl. Set aside.
- On a plate, place the bibb lettuce leaves down, stacking two on top of each other making 3 "taco shells" in total.
- Remove the salmon from the marinade and distribute among the lettuce.
- Evenly distribute the avocado and cucumber.
- Sprinkle with the sesame seeds.
- Drizzle some of the reserved salsa on top.
- Finish with cilantro leaves.
