Tropical Poke Salmon Tacos

Starting with fresh ingredients and keeping them raw helps to give you the most enzymes, vitamins, and minerals needed for good health. This recipe is rich in protein and Omega-3 fatty acids. Salmon is also rich in vitamin B12, which is necessary for producing red blood cells and regulating the health of the central nervous system. This recipe really packs a powerful punch!

How to make Tropical Poke Salmon Tacos

Yields 3 Lettuce Tacos

Taco Ingredients:

  • 2 oz. salmon belly, cut into 1/2 inch cubes
  • 1/2 avocado, cut into 1/2 inch cubes
  • 1/2 tsp white sesame seeds
  • 6 slices of cucumber
  • 6 bibb lettuce leaves
  • 9 cilantro leaves

Poke Sauce Ingredients:

  • Juice and zest of 1 lemon
  • Juice and zest of 1 lime
  • 1 Tbsp soy sauce

Tropical Salsa Ingredients:

  • 2 Tbsp pineapple, diced
  • 2 Tbsp mango, diced
  • 1/4 red bell pepper, small diced
  • 1/2 jalape√±o, small diced
  • 2 scallions, white part only, sliced thinly
  • Juice of half a lime
  • 1 tsp olive oil
  • Sea salt
  • Sesame seeds to garnish
  • Fresh cilantro leaves to garnish

Directions:

  1. Mix all ingredients for poke sauce in a small bowl.
  2. Marinate salmon belly in sauce for 10 minutes while you gather other ingredients.
  3. Mix all ingredients for the salsa together in a small bowl. Set aside.
  4. On a plate, place the bibb lettuce leaves down, stacking two on top of each other making 3 "taco shells" in total.
  5. Remove the salmon from the marinade and distribute among the lettuce.
  6. Evenly distribute the avocado and cucumber.
  7. Sprinkle with the sesame seeds.
  8. Drizzle some of the reserved salsa on top.
  9. Finish with cilantro leaves.
