The Chef

Leading us with over 18 years of service to the greater Atlanta community, Chef Ryan Smith is the culinary director and a founding partner of World of Quercus.

Ryan and his wife, Kara Hidinger, are owners of Staplehouse in Atlanta. Since opening in 2015, Staplehouse has acquired a Michelin star, been named “Best New Restaurant” by Bon Appetit and GQ, and featured on programs such as CBS Sunday Mornings, CNN, and TODAY for its philanthropic contributions to the service industry community. Chef Smith was also a James Beard finalist for best chef Southeast in 2016, 2017, and 2019.

Ryan’s commitment to excellence, innovation, and the use of our farm and its thriving nature is truly spectacular and we’re thrilled to share his vision with you!

The Method

Along with other biodynamic teachings, we believe in eating seasonally, and our menu shifts accordingly to reflect the best of what each season has to offer. We want all our guests to discover the holistic process of how the food they’re eating gets from our farm to their plate. During your stay, we invite you to take a garden tour with our head gardener, sit down one-on-one with our in-house nutritionist, and spend time with Chef Smith as you partake in a culinary demonstration.

The Experience

In addition to the tasting menu at Uberto, Chef Smith thoughtfully prepares all meals for guests at Quercus to be enjoyed throughout our property.

Sip espresso fireside in our library, dine al fresco from the porch of our Cottage, picnic in the privacy of our pecan grove.
